Although the calendar indicates it’s spring, Spokane didn’t get the memo. This weekend we were blessed with two beautiful days, but they were just a tease. Monday came and we were right back where we started: sleet, rain, hail and wind. Bring on the soup!
Italian Sausage Orzo Soup
Ingredients
4 oz orzo
3 hot Italian turkey sausage links, crumbled
1 can diced tomatoes, drained
1/2 yellow onion, diced
4 oz mushrooms, sliced
2 cups fresh spinach, chopped
6 garlic cloves, minced
4 cups chicken stock
2 tsp EVOO
2 tsp Italian seasoning
1 bay leaf
1/2 tsp black pepper
salt to taste
Directions
Heat large pot to medium, add crumbled hot Italian turkey sausage, brown and set aside. Add EVOO, garlic, onion, mushroom, Italian sausage, and black pepper. Saute until onions are translucent, approximately 5 minutes. Add chicken stock and diced tomatoes and bring to a boil. Add orzo and chopped spinach and reduce heat to medium high. Cook for 15 minutes. Add salt to taste and remove bay leaf. Serve topped with parmesan cheese.
